  • Broad beans also work well as a binder in, for example, vegetable patties

    • Check for stones or other debris, then pick them out

    • Soak overnight or for at least 8-10 hours

    • In a large bowl add cold water, enough to allow for expansion. Then cover with a clean towel

    • Drain and rinse before cooking

    • Bring plenty of water and salt to a boil, then let the beans simmer gently for 10–15 minutes

    • They can also be cooked without soaking, gently simmer for about 25 minutes

    • We recommend boiling a larger batch and then freezing it in flat portions. These smaller portions can then be used as and when you need them!
