    • Check for stones or other debris, then pick them out

    • Rinse the lentils throughly

    • Add the lentils to a pot with three times as much water as lentils (for example, 1 cup of lentils to 3 cups of water)

    • Bring to a boil, then reduce the heat and let them simmer gently

    • Cook uncovered for about 10–15 minutes for a firm texture, or up to 20 minutes for a softer consistency

    • Skim off any foam that forms on the surface during cooking

    • Season after cooking, as adding salt too early can make the lentils tough
