Check for stones or other debris, then pick them out

Bring to a boil, then reduce the heat and let them simmer gently
Cook uncovered for about 10–15 minutes for a firm texture, or up to 20 minutes for a softer consistency
Skim off any foam that forms on the surface during cooking
Season after cooking, as adding salt too early can make the lentils tough
