Place the dry soya chunks in a strainer and rinse them a couple of times with fresh water to remove any dust or debris
Choose one of the following methods to soften them:
Boiling: Bring 3 cups of water to a boil in a pan, optionally adding a pinch of salt or a splash of milk to help with flavour. Add the soya chunks and boil for 4 to 5 minutes on medium heat
Soaking: Submerge the chunks in hot water for about 10-15 minutes, or in cool water overnight
Drain the water using a strainer. Rinse the chunks very well with fresh, cold water multiple times
Once the chunks are cool enough to handle, firmly squeeze out all the excess water between your palms. This is a crucial step; if not done properly, the chunks will be bland and watery
The soya chunks are now ready to be used in any recipe
