    • Place the dry soya chunks in a strainer and rinse them a couple of times with fresh water to remove any dust or debris

    Choose one of the following methods to soften them:

    • Boiling: Bring 3 cups of water to a boil in a pan, optionally adding a pinch of salt or a splash of milk to help with flavour. Add the soya chunks and boil for 4 to 5 minutes on medium heat

    • Soaking: Submerge the chunks in hot water for about 10-15 minutes, or in cool water overnight

    • Drain the water using a strainer. Rinse the chunks very well with fresh, cold water multiple times

    • Once the chunks are cool enough to handle, firmly squeeze out all the excess water between your palms. This is a crucial step; if not done properly, the chunks will be bland and watery

    • The soya chunks are now ready to be used in any recipe
